If you pass through a quality degradation check while holding a skin in your inventory that can result in a degradation without notice (just as food can grow stale while you're carrying it around). If the skin was fine it's harsh to degrade it directly to harsh, though.

I've seen this happen as well, and I suspect it is due to rotting.  I had a superior elk fur go directly to harsh because I forgot about it for a day.  Things seem to go bad between morning and late morning, that's when the game figures a new day starts.

Actually, the day ticks over at sometime *during* "morning". You can see that if your character is injured, as injuries heal at that time (so a penalty of 5 may go to 4), and the treatment indication also goes away. Skill increase indicators are also removed when the day ticks over.
It's a bit of a pain that you can't determine with certainty if it's still "yesterday" or "today", as you'll get a backlash if your morning sacrifice happens to actually happen "yesterday", when you've already made a sacrifice.

I don't think this is the case, I'm very sure it gone from 2 fine rinsed mallard-skins to 1 fine mallard leather and 1 harsh rinsed mallard-skin and both killed at that day which shouldn't rot.

Drop me the savegame, davidor, and I'll check it out.
Hard to figure out what might have happened but I'll try reproduce with that character at the same spot to see if the terrain background activities may have be triggering some glitchy behaviour.
