If character sow a field and forget about the seedlings until next spring, not visiting the location with the field all this time and return only after the moment when the first sprouts can appear, the plants will be ready for harvesting. Sometimes something similar happens with wild plants on the map.

I think the problem is that the status of the plants at the time of the last visit is saved and there is a counter of days that have passed since the visit. When the player returns to a location where he has not been for a long time, there is no check that it was winter and the old plants should have withered, resetting this counter to the day of the first sprouts.

I think I was able to capture this moment in a save game and can send it for analysis if needed.

Yes, this sort of glitches have been reported sometimes but the origin of the issue hasn't been completely verified.

With the help of the savegame I got this issue fixed now.
It was indeed about flags and counters for withering and sprouting not working properly in all conditions, specifically if the earlier generated plants were found again during their sprouting month. Triggering of the bug was rather complex, but I'm hopeful it's fixed now for all the possible instances.
