Ya the try random herbs till he accepts them is how I do it too. I was suggesting that I think it would cool to have the option to learn a herb from completing the quest as opposed to receiving an herbal blend. I always value knowledge. I also refuse or ignore quests. I got a bear pipe gather quest around the 3 day of my spring start.

I don't spend a lot of time gather herbs so alot of time when that quest comes up I'm not sure which herbs I can even identify yet.

 Your word is law but for the sake of friendly debate, I hear the quest as a need for young legs it's a task for an apprentice or novice. If they were wanting to test your herb lore then they should give an ailment like I've have a fever or cough, maybe trouble sleeping and they ask for herbs to help and thus you must be able to identify the properties of a plant to know what to give. But that would be an entirely different quest all together.

I just wish there were ways to learn from my elders

So my character received a find herbs, burdock, for old man quest. My herb lores not great and I don't recognize it. This got me thinking. If I was actually there I would ask what burdock looked like where it likes to grow? So I suggest the following. On gather herb quest the old men should also say something like it grows in fields or it likes river banks. I don't want a quest area circle just terrain preference. Second I think they " show" you what it looks like so you at least have a 1 out of 2 or 3 chance of recognizing out it in the field. And third if you succeed in the quest the old man teaches one or more properties of the plant. I would rather receive that knowledge than the traditional reward. Maybe a dialogue choice of do you know about this herb? Ok then let me tell you about it or oh you already are familiar this the uses of this herb then take this reward.

I like things as they are. This is another slippery slope to introducing politics into UrW.

I hear you but by your rationale politics are already in the game. When was the last time you got a quest from a female Npc or saw a female hunter or found one will to travel with you? There is a balance between current societal norms and the norms of the game's historical fiction setting. I think big elk has struck that balance well. The PC can be male or female no plus or malus to gender, it a cosmetic difference. While the NPCs somewhat conform to the gender norms of the iron age north.

@JEB Davis your right they wouldn't be likely to be carrying them but I rather they do for balance of playability vrs realism tempered by what I would assume to be easier to code and use existing trade mechanics. But even better the addition Npc crafting and professions via Ask. Hello could you bake me some bread I'll trade you these two rabbits. Yes come back I half an hour. Could you carve me a special punt with the force of water. Bring me a long felled in the rain and come back in a month.

It would be mostly for role playing but what if women carried thing like bread, mushrooms, soups and porridges. Hi there good maid I'll trade you these 3 grouse for a bowl of that delicious homecooked stew, I sure  am tired of roast trail food and that smell great

I agree. We know that they are charitable to NPCs ie wounded adventures. I think it would be very much in the spirit of the game for them to say I see your starving go collect fire wood and I'll give you supper.

I hardly bother (L)ooking at anyone other than hunters and adventures, the other villagers rarely seem to offer goods. However it would be cool if people had occupation related items, Craftsmen with carving axes and knives, even better sages and old men with herbs for sale. Maybe somehow labeled if you buy them.

Well if we are talking snow mechanics persistence hunting large game in deep snow the player should get a huge advantage when wearing skis. Imagine an elk ploughing through deep snow vrs a hunter chasing it by skiing on top of the snow. I read an article in Nat Geo about an ethnic group in far west China that traditionally hunted that way.

Too piggy back on this if vitamins are implemented add some sort of dried meat mixed with berries or herbs to use as a trail food. To balance this make it time consuming or or labor intensive to make so we can't just make a bunch and live off our unreal world kaumo kibble.

On the subject of fat I carry bird and squirrel fat for traps. The animals do not seem to care weather you bait with .1lb piece of fat or a 1 lb cut. So I can carry multiple .1 fat piece for the same weight as 1 cut. Also I've not noticed any real difference between fresh stale and spoiled raw bait, you can't use cooked food.

I generally don't have companions assist me with felling trees. I have them fell the the trees while I either dress them into logs or move them into place next to the build site. Also as an active Hunter or successful trapper of large game I feel that once I dry or smoke I'm first elk or a couple of deer food is not generally an issue. I have more trouble getting hides proceed and and meat to market without it spoiling. So in my opinion meat is a cheep resource and companions are worth it.

Some times Mico managing is part of the game a player likes and chooses, also just cause I'm a water nerd a 500 kg is huge ,water weighs 8.34 lb per gallons, and more than a single person would need before stagnation issues, the weight of a trunk is just right about 55 gallons and loadable on a  bull. As to how deep a quick Google search said about 3 to 5 meters deep on average to hit ground water in Finland. So I would say shovel to dig, slender trunks for ladder to access and egress while driving, stones to line, and possibly boards to shore up the hole while digging before lining with stone. Also a stretch, but maybe Weather lore to "witch for water"
