It's pretty easy to mod footwraps out of any cloth you want, this is from some old mod, don't remember if it's original or my addition. It might need some editing to fit into current conventions:

Awesome! Anything that makes the NPC more involved in the game is well received. I see this as a new step towards marriage and lifetime companions.

Don't know about nutrients, but in the base game boiling and baking let you combine more ingredients than roast.

What a coincidence, I redownloaded DF just yesterday! I was pretty deep into Dwarf Fortress a couple of months ago but then lost interest and I have pretty much forgotten every command by now.

Maybe not exactly the period the game covers but I have found this videos regarding medieval food and are quite interesting.

Something interesting mentioned in the first video is that salted and dried food had to be boiled at least twice before being edible, that's something that could be implemented in the game. Right now we are mostly chewing that hard leather at least in the vanilla game.

Something else to keep in mind is butchering an animal at the start of winter. The cold stops it from rotting and you have fresh food the whole winter. I had never thought about that.
