You can roast fat too. In the very early phase of a new character I either roast and eat the bird fat, use it to bait traps (to hopefully convert it into owl meat), or sacrifice it. In the earliest phase I don't have the time to take care of the skin, and in the marginally later phase I can use bark for tanning.

If you kill a seal, however, you'll get a lot of fat left over after the skin is tanned, and yes, you can roast and eat it.

UrW tries to simulate your character's limited knowledge about plants by giving randomly assigned "don't know" names to them. You can try to increase the herb lore by frequently trying to identify them, which gradually increases the skill which eventually allows you to identify them all. Once my starting character has enough food to relax a bit I try to perform a weather lore and identify each of a number of carried leaves each morning when awakening, evening when going to bed, before eating, and when waiting for fatigue to wear off before doing something quality related (such as tanning hides). Note that you can't spam identification attempts, so some time will have to pass between each attempt.

The general advice is not to eat unidentified things, in particular mushrooms.

It's as it has been for a long time. Warrior camps are extremely rare, and I've never seen one apart from the one in the runaway slave starting scenario. However, there have been fairly recent forum reports of people encountering war camps (which are not to be confused with villages).

It's probably another case where the game has changed over the years, but some parts haven't adapted to those changed.

In order to get the whole plant you need to Harvest them. Using "G"et will just pick the leaves. I don't remember if turnips can be picked or not, but I know cereals cannot: you have to harvest those.

If I remember correctly it calls for a single tile rock completely surrounded by open water, so I would suspect such tiles in the sea would work, but I've never done the quest by the sea.

It is possible to perform the quest at any time of year provided you can find a suitable location that's ice free. However, it it is challenging to do it without risking hypothermia.

The Jaredonian set isn't part of the vanilla UrW game, so the issues with that set should be addressed to the mod maker. As far as I understand, the Mac uses some layer (not RGB) differently from other OS' and so gets grumpy if some layer (alpha channel?) doesn't follow its opinion on conventions (I have no idea whether Apple is right or wrong about standards), while others don't care.

Also note that the skin IS damaged from neck hits, so reserve those attacks for Njerps/Robbers (they never yield quality skin anyway :P ).

If I remember correctly, any furs will do, but I'd finish the process (i.e. cleaning, tanning, and softening) before leaving. In the past I've performed the quest with smaller game, not the least because I can't carry the meat from a full elk with me, even with a dog of burden.
If it's winter I'd consider drying the meat while waiting for the skin and return later to collect it. In summer I'd try to smoke some of it in a nearby Kaumo village (if there is one nearby) for later collection. Otherwise I'd just accept that most of it will spoil and take what I can as dog food, possibly collect the rest later.

Probably due to its isolated location, in Finland the Iron Age happened much later. 
IIRC that was mentioned by Sami or Erkka at some dim time in the past, likely near the end of the Iron Age  ;)
Yes, Scandinavians were very backwards at the time, and the Finns even more so. It was a backwater of a backwater at the edge of the "known" world. Some parts of the world took longer than others to leave the Iron Age behind.
