Regarding the task of finding lost items in the shelter, if it is a bear or a wolf, I will throw a piece of meat on the ground, one piece for each tile, and then check the footprints. Sometimes bad luck, birds will eat it, but in this way I completed several shelters looking for lost items. I usually find a wolf or a bear, kill it,  chase its tracks

A raw piece of meat or have roasted/smoke/dried ones worked as well?

Only dogs eat processed food, so it would have to be raw.

I've caught several birds with rotten roasted meat as bait, so maybe that's changed?

Did they eat the bait? That the clue that the bait actually is bait.

You can try using trap pit, it can effectively distinguish different creatures (excluding birds)
